Tomato Stuffed Portobello Mushrooms with Mozzarella

Delicious tomato & mozzarella stuffed mushrooms are quick & easy to make.

Ingredients

    Directions

    Step1

    Preheat oven to 375 degrees. Line a baking sheet with aluminum foil. Remove stems and gills of the mushrooms. Halve the tomatoes

    Step2

    In a small bowl combine: 1 tablespoon of extra virgin olive oil, 2 tablespoons of balsamic vinegar, 1 clove of minced garlic and finely chopped basil leaves.

    Step3

    Divide the dressing between the two mushrooms, pouring the dressing inside the caps. Divide the tomatoes evenly between the mushrooms and place them inside the caps also. Top with mushrooms with 1/3 cup of cheese each. Salt and pepper to taste. Bake for 25 minutes or until cheese is golden brown and mushrooms are tender.

    Serve and enjoy!
